Easy Sausage Soup

This is one of my favorite quick and easy soups. It goes together really fast and of course is better the next day but it’s not a necessary to wait. Feel free to alter the quantities of ingredients based on what you like. Should make about 4 servings.

Ingredients

Ingredients:
 
2 Carrots finely chopped
1/2 a Onion finely chopped
1 TBS Olive Oil
1-2 tsp of Basil, Oregano, and Garlic Powder
1 tsp Salt and Pepper
2 Italian Sausages
1 Can Stewed Tomatoes
1 TBS Tomato Paste or 2 TBS leftover marinara sauce
4-5 Cups Chicken Broth
1 Cup Canned White Beans
2 Cups chopped Spinach

Directions

Chop the sausage into small pieces and sauté until just about cooked through.
Set the sausage off to the side.
Sauté the Carrots and Onions in the olive oil. Add all the salt and Herbs. Then add tomatoes, paste, and broth. Bring to a boil and cook for about 15 minutes. Check to make sure the carrots are cooked through.
Add in the sausage and cook for about another 10-15 minutes on low to medium.
Add the beans and 2 cups chopped spinach at the end and cook for just 1-2 minutes more to warm them up.
 
*I usually top with shaved parmesan.
*I have also made it with one sausage and then added leftover chicken at the end.
*Using cooked sausage will decrease cooking time.
