Fennel & Citrus Salad

A flavorful, fresh salad that is a little different!

Amelia helped me make this and we had so much fun.

This is very adaptable and forgiving.  So don’t worry about it if you don’t like all the ingredients or have all the ingredients.  Always have fun and experiment.

Ingredients

  • 2 Fennel Bulbs
  • 1 Grapefruit
  • 1 Blood Orange
  • 1-2  Mandarins or oranges
  • 1/4 cup sliced thin red onion
  • 1-2 TBS chopped Italian
  • 1 garlic clove minced
  • 2 TBS olive oil
  • 2 TBS red wine vinegar
  • 1 TBS Grapefruit juice
  • 1 TBS lime juice
  • 1/2 tsp salt
  • Green olives optional -sounds weird but its so good!

Directions

Make the dressing first by adding all the dressing ingredients to a big bow.

Chop up all the Fennel.  Carefully slice the orange peels off and cut into bite size pieces.  This video will help if you are not sure how to do this.

Chop the parsley.

Slice up some green olives if you are adding those.  They are seriously delicious.

Gently mix it all together and enjoy!

While Amelia and I made this salad, Gerry and E were in the backyard working on a project taking down our winter dome.  Amelia said “We are chefs and Daddy and E are Engineers.”  I thought this was just adorable!
