We had leftover turkey from Thanksgiving and I made a couple turkey and cranberry relish sandwiches and still had more! So I randomly tossed all this together and it was sooo good that I had to share. I ended up making it the next week with leftover chicken thighs.
This is one of those recipes that you should not get stuck on having all the ingredients. Use what you have on hand. Get creative.
I love having these pizza crusts in the freezer ready for quick meals.
- Caulipower Pizza Crust or other plain pizza crust
- Leftover Turkey or Chicken or Tempeh
- 2 TBS Hummus
- 1 TBS BBQ Sauce
- 1/4 Cup Black beans
- 1 TBS Roasted Corn
- 1 TBS Chopped Red onion
- 2 TBS chopped red pepper
- 1/4 – 1/2 Cup Colby Cheese
Preheat the oven to 425
Spread on the Hummus first
Drizzle BBQ sauce on top
Sprinkle on the black beans, corn, red onion and protein of your choice.
Top with either shredded or thin slices of colby cheese.
Bake for about 10-15 minutes
Then you can top with some cilantro.
