
I heard that Trader Joe’s is selling a pre-made cauliflower crust. So I went to get some but of course they were out. My heart was set on it. Luckily the nice guy at the sample area gave me his recipe. I had to google some variations but this is what I did and it turned out delicious. You could actually pick up a slice and it did not even taste like cauliflower. Try it out and I think you’ll be impressed.
Ingredients:
1 Head of Cauliflower or 1lb of crumbled Cauliflower
1/3 cup Goat Cheese
1 Egg beaten
Salt
Pepper
Herbs of your choice 1/2 TBS Parsley and Basil
Toppings of your choice- I did Black Olives, Feta, Pepperoni, Red Onion, and Green Pepper
Directions:
Preheat Oven to 400 degrees
Process the Cauliflower in your food processor until it resembles rice. I had to do this in batches.
Then add about 1/2 cup water
Microwave for about 4 minutes. I stirred halfway through.
Then use a cheese cloth to squeeze all the water out. It will be a ton of water so keep squeezing. This took some work but it definitely is an important step because I think this is why the crust holds together so good.
Then mix the cauliflower with the goat cheese egg and herbs
Spread it on a cookie sheet lined with parchment paper.
Bake for 35-40 minutes.
Then load on your sauce and topping and cheese and bake for about 5-7 minutes more until your cheese melts.
Slice and enjoy!
It was really good the next day for lunch too. I ate it cold.
